They do, but they don't release everything.

I could see a DVD coming out of this--they had several camera angles going.

whatever they do with the audio/video...you have plenty of time to guess!
He is doing these small shows to build up his set, once he has his set fully ready he is doing a big venue tour which is already scheduled for months and could likely stretch to a year.
Only after a comedian tours his material do they release its audio/video, because basically after it is released they have to build up all new material to tour with.

Very true. I never really thought of that. Nothing worse than watching a comedy special on netflix and then going to see that comedian live and listening to all the same jokes...

Louie CK did something similar at a comedy club down the block from me.
Did two nights of working out jokes, and then a few months later used the material in a taped special.
I think he also filmed a bit for his show there too.
